1 cup half & half
2 tablespoons onion, chopped
1 tablespoon pimento, chopped
1 pound pork sausage
6 slices Texas Toast
1 1/2 cup shredded cheddar cheese
Beat eggs and half & half, add onions and pimento. Cook sausage on medium heat, breaking up until brown. Drain grease and set aside.
Grease a 9 x 13 glass baking dish. Line the pan with bread, then scatter sausage and cheese over top. Pour egg mixture over top. Cover with foil and refrigerate overnight.
Preheat oven to 350 degrees. Bake 25-35 minutes, removing the foil during the last 5 minutes, until the egg mixture is set.
