1 C. old fashioned oats

2 packets rapid rise yeast

1/2 tbsp. salt

1/2 C. honey

2 tbsp. melted butter

5 C. all purpose flour

1 egg yolk

poppy seed

Pour 2 C. boiling water over oats; let sit for 30 minutes. Soak yeast in 1.3 C. lukewarm water; let sit for 30 minutes. Use Kitchen Aid mixer with dough hook; combine oats, yeast, salt, honey and butter. Gradually add flour and knead for 5 to 10 minutes. Spray large glass bowl; add dough. Spray bottom of large glass dinner plate; set on top of the bowl. Set bowl in kitchen sink. Fill sink with very warm water only halfway up the bowl. Let rise for 45 minutes. Punch down dough; divide evenly into 2 greased 9x5 bread pans. Take egg yolk add a few drops of water; punch on the top of the bread and add poppy seed generously. Set pans on cookie sheet on the stove top or counter; spray towel and cover bread. Let rise 30 to 40 minutes. Remove towel and bake at 325 degrees for 4- to 50 minutes.
