3 eggs

2 cups sugar

2 cups vegetable oil

3 cups flour

1 tsp. baking soda

1 tsp. salt

1 tsp. ground cinnamon

2 1/2 cups red raspberries

1 cup chopped pecans, optional

In a large mixing bowl, beat eggs, sugar and oil. Combine the flour, baking soda, salt and cinnamon; stir into egg mixture. Fold in raspberries and pecans if desired. Pour into greased and floured loaf pan. Bake 350 degrees for 50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes and remove from pan onto a cooling rack. (2 cups mashed unsweetened strawberries can be substituted for the raspberries).
