1 tablespoon oil 

1 1/2 pound lean turkey, ground

2 tablespoons chili powder

2 teaspoons ground cumin

1 red onion, chopped

2 garlic cloves, minced

1 pound sweet potatoes, peeled and cubed

1/4 cup quinoa, uncooked

1 (15 ounce) can fire-roasted tomatoes, diced

1 (15 ounce) can black beans, drained and rinsed

1 )15 ounce) can tomato sauce

1/2 cup low-sodium chicken or vegetable stock

1/2 teaspoon salt

1/4 teaspoon black pepper 

Optional toppings: shredded cheese, tortilla cheese, sour cream, cilantro 

Heat oil in a large skillet. Add onion and garlic; saute until fragrant. Add turkey, chili powder and cumin. Continue cooking until turkey crumbles and is no longer pink. Transfer to large pot and add remaining ingredients. Simmer, stirring occasionally until tender. Salt and pepper to taste. Serve with toppings.
