Keen on quinoa: Clyde's introduce Blue Zones-approve pub grub

SIOUX CITY | Clay Lillie, from Clyde's Grill & Pub, has been getting a crash course in cooking with quinoa.

"I hadn't work with quinoa much before," the sports bar's executive chef admitted, "but it's really versatile and very healthy."

In fact, the high-protein rice-like "superfood" figures prominently in Lillie's new quinoa and veggie burrito as well as the quinoa bowl that also contains ratatouille (a mix of zucchini, yellow squash, red onion, red pepper, mushrooms, Yukon potatoes and tomatoes) served in a rich marinara sauce.

"Served alone, quinoa doesn't have much flavor," Lillie said. "When served along side other ingredients, it really picks up flavors."

Clyde's "top chef" said these creative items have been added to the menu since the 3828 Stadium Drive restaurant has recently become Blue Zones-designated.

Sioux City was named a Blue Zones demonstration site in 2013, one of seven cities in Iowa chosen for the initiative at the time. Currently, 15 cities are participating in the project -- a component of Iowa's Healthiest State Initiative unveiled in 2011 by Gov. Terry Branstad.

According to project leader Chris Liberto, one of Blue Zones' chief goals was to designate 25 percent of Sioux City's independent or locally owned eateries as Blue Zones-designated restaurants.

Liberto said Blue Zones will meet that minimum goal in the next few months.

Over the past year-and-a-half, eateries as diverse as McCarthy & Bailey's, Shahi Palace and SweetWater Cafe have received Blue Zones seals of approval.

To meet the criteria, restaurants must offer at least three healthy main dishes -- not including salads -- on its menu; leave salt shakers, breads and chips off the tables (unless requested); and train servers to promote half-sized portions of top-selling entries, among other suggestions.

"Initially, there was a misconception that we wanted restaurants to eliminate certain foods," Liberto said. "In reality, we wanted restaurants to serve what they always did. We just wanted them to add extra menu items for diners who wanted to eat healthy."

For instance, Clyde's will continue to serve such longstanding items as its buffalo wings, top sirloin steak and "Mighty Mo" (a burger served with country-fried bacon, cheddar cheese, grilled red onion, tomato jam an an over-easy egg served inside sourdough bread).

In addition, diners will now have a choice of healthier fare, which includes a kid-friendly menu and an option of fresh fruit to replace fries.

This is good news for Rush Werks and Clyde's general manager Tracy Erlandson, who is hoping to expand the restaurant's clientele.

"Clyde's has always had a good reputation for bar food," she noted, "but we want to redefine what 'bar food' means."

According to Clyde's manager Tim Blakeley, that means adding creative foods that utilize the freshest ingredients.

"Five years ago, it was a novelty to see a sports bar employ an executive chef and offer a wide variety of food on its menu," he said. "Now, it's considered a good business decision."

And nobody's more enthusiastic about creating flavorful fare than Lilley.

"It goes without saying that fresh ingredients are healthier than canned ingredients," he said. "My main interest is in flavor. Good ingredients just taste better."

While he acknowledged some of Clyde's clientele will continue to munch away on the bar's chili cheeseburgers, fish and chips and giant onion rings, Lillie said the new Blue Zones-approved fare should satisfy appreciative customers.

"Our Blue Zones meal will be bumping up the protein without losing any of its flavor," he said. "Chances are it taste so good, you'll forget it's also good for you."

Going global: Clyde's chef bring international fare to sports bar menu

SIOUX CITY | Following a career in construction, a stint in the U.S. Navy and a number of different jobs inside various restaurant kitchens, Clay Lillie, 29, has discovered the best culinary training comes from home.

"I love using Mexican ingredients and reinterpreting classic Mexican meals," Clyde's Grill & Pub's executive chef explained. "I think that comes from having a wife of Hispanic descent."

Indeed, Lillie credited his wife Tavita for taste-testing such distinctively South-of-the-Border fare as Clyde's street tacos and a Ranchero burger, a burger that's topped with sauteed tortilla strips, smoked mozzarella, an over-easy egg, guacamole and a zesty chili rojo sauce.

Yet Lillie said he also enjoys cooking food that has the taste of the Far East, as exhibited in Clyde's Korean BBQ tacos, which contains strips of beef sliced thin, marinated and chopped, served on a bed of cucumber slaw and a sriracha aoili.

And don't forget Clyde's ratatouille (a mix of zucchini, yellow squash, red onion, red pepper, mushrooms, Yukon potatoes and pear tomatoes in a rich marinara sauce), which Lillie said has a definite French twist.

"America is a 'melting pot' country and Sioux City is a 'melting pot' community," he suggested. "I love taking classic international cuisine and giving it an All-American twist."

Lillie identifies his style of cooking as a form of fusion cuisine.

"You take a little from this culture, you take a little from that culture, add something of your own, and then you create a one-of-a-kind meal," he said.

Certainly, Lillie has the background for such mix-and-match cuisine. After all, he grew up watching cooking shows on the Food Network.

"By the time I was 9 years old, I knew I wanted to be Emeril Lagasse," he said with a laugh.

Ironically, Lillie would later work at Bev's on the River for executive chef Rick Beaulieu, who had previously worked as a saucier for New Orleans' famed Commander's Palace -- the longtime home of Emeril.

"Rick taught me all about Cajun cuisine, which had its origins in France," Lillie said. "Now, that's real fusion cooking."

Beaulieu also encouraged Lillie to create his own path.

"I wouldn't have applied for an assistant chef job at Clyde's three years ago without Rick's encouragement," Lillie admitted. "I wouldn't have had the experience to become Clyde's executive chef four months ago without learning about food from Rick."

Since becoming the sports bar's "top chef," Lillie has slowly been adding some non-sports bar type fare onto Clyde's menu.

Such meals have including things like ahi tuna; prime rib; and a chicken and watermelon salad, which comes with grilled, citrus-marinated chicken, romaine lettuce, spinach, cucumbers and watermelon drizzled with feta cheese and a white balsamic vinaigrette.

That isn't to say that Clyde's doesn't also have a wide selection of burgers, wings and sliders.

"We're always trying new things," Lillie said. "But our guests' favorite meals will always remain the way they like it."

Despite that, Lillie is happy with the success of his fusion cuisine, which he said is becoming an industry trend.

"People are seeing more ethnic ingredients on TV and they're seeing it in the grocery stores," he said. "Once they see it, they want to try it. Once they try it, they're going to like it."

This is certainly true for Lillie, who said he has already mastered a recipe that incorporates barbecue sauce with a decadent Mexican mole sauce.

"My mole barbecue sauce has even impressed my wife," he said, proudly. "Now, that's really saying something."
